Crispy pancakes with lemon, strawberry coulis

for 4 people


Pancake :

  • 150g flour
  • 2 tablespoons oil soup
  • 50g caster sugar
  • 3 eggs
  • 40cl whole milk


  • 12.5 cl of milk
  • 12.5 cl of full cream
  • 80g caster sugar
  • 3 egg yolks
  • 20g cornflour
  • Zest of 1 lemon (organic)
  • Strawberry sauce or red fruits
  • butter
  • strawberries


Make pancake batter , let stand for 24 hours. ( Pancakes will be thinner ) .

Make pancakes, cool.

Make the cream : boil the milk + cream. beat together

egg + sugar + cornstarch yellow .

Add the hot milk , put on fire and stir until the first bubbles .

Add the lemon zest.


In terms of work , spread each pancake on clingfilm and

cover with lemon cream , roll in the film for a pudding.

Book pancakes in the fridge.

3 hours before serving store in the freezer (to facilitate cutting ) .

Butter a baking sheet and sprinkle with sugar.

Preheat oven on grill position.

Unpack pancakes and cut into 4 portions and place them on the plate and caramelize , putting the plate under the grill . A monitor .
