Y faire pocher les poires enti\u00e8res (\u00e9pluch\u00e9es et citronn\u00e9es). Faire une cr\u00e8me anglaise (un peu plus \u00e9paisse) avec le lait + les jaunes d\u2019\u0153ufs + le sucre + la ma\u00efzena. Faire mac\u00e9rer les raisins dans le rhum. R\u00e9server le tout au frais. Faire dorer les amandes au four.<\/p>\n<p class=\"paragraph_style_8\">Le jour m\u00eame<\/p>\n<p class=\"paragraph_style_6\">M\u00e9langer les raisins \u00e0 la cr\u00e8me et verser dans des coupes. Poser sur le dessus une poire. Parsemer les amandes effil\u00e9es. Faire un caramel blond, avec 100g de sucre + le glucose + l\u2019eau.
