{"id":878,"date":"2013-01-17T14:39:46","date_gmt":"2013-01-17T13:39:46","guid":{"rendered":"http:\/\/www.alcollot.fr\/Recettes\/?p=878"},"modified":"2019-10-19T17:25:26","modified_gmt":"2019-10-19T15:25:26","slug":"fraisemania","status":"publish","type":"post","link":"https:\/\/www.alcollot.fr\/Recettes\/fraisemania\/","title":{"rendered":"Fraisemania"},"content":{"rendered":"<p class=\"paragraph_style_1\">Pour 10 personnes.<\/p>\n<p class=\"paragraph_style_1\">Ces 3 desserts se font en petite quantit\u00e9, vous pouvez n\u2019en servir qu\u2019un<\/p>\n<p class=\"paragraph_style_1\">en augmentant les proportions.<\/p>\n<p class=\"paragraph_style_2\">Gratin de fraises<\/p>\n<p class=\"paragraph_style_2\">Ingr\u00e9dients :<\/p>\n<ul>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">7,5cl de lait<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">10cl de cr\u00e8me fraiche<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">1\/2 gousse de vanille<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">2 jaunes d\u2019oeuf<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">2 blancs d\u2019oeuf<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">20g de ma\u00efzena<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">100g de sucre<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">sucre glace<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">500g de fraises<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">menthe<\/p>\n<\/li>\n<\/ul>\n<p class=\"paragraph_style_5\">Faire une cr\u00e8me p\u00e2tissi\u00e8re, faire chauffer le lait + la cr\u00e8me + la vanille.<\/p>\n<p class=\"paragraph_style_5\">M\u00e9langer les jaunes d\u2019oeuf + 60g de sucre + 20g de ma\u00efzena. Ajouter le m\u00e9lange lait-cr\u00e8me<\/p>\n<p class=\"paragraph_style_5\">chaud et remettre sur le feu, sans cesser de remueravec un fouet, jusqu\u2019au premier bouillon.<\/p>\n<p class=\"paragraph_style_5\">R\u00e9server. Fouetter les blancs d\u2019oeuf d\u00e8s qu\u2019ils montent. Ajouter 40g de sucre pour bien les serrer.<\/p>\n<p class=\"paragraph_style_5\">Continuer \u00e0 battre jusqu\u2019\u00e0 ce qu\u2019ils soient bien fermes. Les ajouter \u00e0 la cr\u00e8me p\u00e2tissi\u00e8re ti\u00e8de<\/p>\n<p class=\"paragraph_style_5\">Dans des petites assiettes creuses ou petites coupelles, d\u00e9poser des morceaux de fraise,<\/p>\n<p class=\"paragraph_style_5\">recouvrir avec la cr\u00e8me p\u00e2tissi\u00e8re, saupoudrer de sucre glace<\/p>\n<p class=\"paragraph_style_5\">et passer sous le grill du four en surveillant ou au chalumeau.<\/p>\n<p class=\"paragraph_style_5\">D\u00e9corer avec une fraise et une feuille de menthe.<\/p>\n<p class=\"paragraph_style_6\">Fraises po\u00eal\u00e9es-glace vanille<\/p>\n<p class=\"paragraph_style_6\">Ingr\u00e9dients :<\/p>\n<ul>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">600g de fraises (petites)<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">1 cuill\u00e8re \u00e0 soupe de miel liquide + 1 cuill\u00e8re \u00e0 soupe de beurre<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">1 cuill\u00e8re de baies roses<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">glace vanille<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">10 sabl\u00e9s bretons ou maison<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">1\/2 citron vert<\/p>\n<\/li>\n<\/ul>\n<p class=\"paragraph_style_5\">Laisser les fraises enti\u00e8res.<\/p>\n<p class=\"paragraph_style_5\">Dans une po\u00eale, faire chauffer le beurre, ajouter les baies, puis les fraises, puis le miel,<\/p>\n<p class=\"paragraph_style_5\">puis le jus du 1\/2 citron. Laisser cuire, en m\u00e9langeant d\u00e9licatement pendant 2 mn.<\/p>\n<p class=\"paragraph_style_5\">Sur une assiette, disposer un sabl\u00e9, le recouvrir d\u2019une boule de glace vanille et parsemer<\/p>\n<p class=\"paragraph_style_5\">tout autour les fraises un peu de jus et les baies roses.<\/p>\n<p class=\"paragraph_style_6\">Fraises au vin et au miel<\/p>\n<p class=\"paragraph_style_6\">Ingr\u00e9dients :<\/p>\n<ul>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">500g de fraises<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">50cl de vin rouge ( C\u00f4tes du Rh\u00f4ne)<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">200g de miel<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">1 \u00e9corce d\u2019orange + 1 \u00e9corce de citron<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">1 cuill\u00e8re \u00e0 caf\u00e9 de baies roses<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">1 clou de girofle + 6 grains de poivre<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">1 \u00e9toile de badiane<\/p>\n<\/li>\n<\/ul>\n<p class=\"paragraph_style_7\">La veille :<\/p>\n<p class=\"paragraph_style_7\">dans une casserole, verser le vin + le miel + les \u00e9corces + les \u00e9pices. Porter \u00e0 \u00e9bullition<\/p>\n<p class=\"paragraph_style_7\">puis laisser cuire doucement pendant 30 mn.
