{"id":870,"date":"2014-04-18T14:34:56","date_gmt":"2014-04-18T12:34:56","guid":{"rendered":"http:\/\/www.alcollot.fr\/Recettes\/?p=870"},"modified":"2019-10-19T17:27:01","modified_gmt":"2019-10-19T15:27:01","slug":"rhubarbe-facon-tiramisu","status":"publish","type":"post","link":"https:\/\/www.alcollot.fr\/Recettes\/rhubarbe-facon-tiramisu\/","title":{"rendered":"Rhubarbe fa\u00e7on tiramisu"},"content":{"rendered":"<p class=\"paragraph_style_2\">Pour 4 personnes.<\/p>\n<p class=\"paragraph_style_2\"><span class=\"style_1\">Ingr\u00e9dients\u00a0<\/span>:<\/p>\n<ul>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">600g de rhubarbe<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">150g de sucre + 10cl d\u2019eau (sirop)<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\"><span class=\"style_1\">Cr\u00e8me <\/span>:<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">250g de mascarpone<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">3 oeufs<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">75g de sucre<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">100g d\u2019amandes effil\u00e9es<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">20g de beurre<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">50g de sucre<\/p>\n<\/li>\n<\/ul>\n<p class=\"paragraph_style_4\">Pr\u00e9paration :<\/p>\n<p class=\"paragraph_style_5\">Faire un sirop avec 150g de sucre + 10cl d\u2019eau, porter \u00e0 \u00e9bullition pendant 2mn,<\/p>\n<p class=\"paragraph_style_5\">puis ajouter (sans baisser le feu), le 1er tiers de rhubarbe \u00e9pluch\u00e9e et coup\u00e9e<\/p>\n<p class=\"paragraph_style_5\">en petits tron\u00e7ons, porter \u00e0 \u00e9bullition pendant 1mn (surtout pas plus).<\/p>\n<p class=\"paragraph_style_5\">Sortir la rhubarbe de la casserole avec une \u00e9cumoire et r\u00e9server au frais.<\/p>\n<p class=\"paragraph_style_5\">Recommencer l\u2019op\u00e9ration avec le 2\u00e8me tiers puis le 3\u00e8me.<\/p>\n<p class=\"paragraph_style_5\">Cuisson en 3 fois pour \u00e9viter \u00e0 la rhubarbe de tomber en compote.<\/p>\n<p class=\"paragraph_style_5\">Dans une po\u00eale, faire fondre 20g de beurre, ajouter les amandes<\/p>\n<p class=\"paragraph_style_5\">et saupoudrer avec 50g de sucre.<\/p>\n<p class=\"paragraph_style_5\">Faire caram\u00e9liser \u00e0 feu moyen sans cesser de remuer.<\/p>\n<p class=\"paragraph_style_5\">R\u00e9server sur une plaque l\u00e9g\u00e8rement huil\u00e9e.<\/p>\n<p class=\"paragraph_style_5\"><span class=\"style_1\">Cr\u00e8me :\u00a0<\/span>battre 3 jaunes d\u2019oeuf avec le sucre pour obtenir<\/p>\n<p class=\"paragraph_style_5\">un m\u00e9lange bien mousseux puis ajouter le mascarpone et continuer \u00e0 battre pendant 2mn.<\/p>\n<p class=\"paragraph_style_5\">Ajouter d\u00e9licatement les blancs d\u2019oeuf battus en neige.<\/p>\n<p class=\"paragraph_style_5\">Dans des verres ou des coupes, verser la rhubarbe<\/p>\n<p class=\"paragraph_style_5\">et recouvrir avec la cr\u00e8me au mascarpone.<\/p>\n<p class=\"paragraph_style_5\">Couvrir et r\u00e9server au frigo pendant 4 heures minimum.<\/p>\n<p class=\"paragraph_style_5\">Au moment de servir, parsemer d\u2019amandes caram\u00e9lis\u00e9es.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Pour 4 personnes.
