{"id":830,"date":"2010-09-01T09:54:08","date_gmt":"2010-09-01T07:54:08","guid":{"rendered":"http:\/\/www.alcollot.fr\/Recettes\/?p=830"},"modified":"2019-10-19T16:47:35","modified_gmt":"2019-10-19T14:47:35","slug":"filets-de-canard-aux-olives","status":"publish","type":"post","link":"https:\/\/www.alcollot.fr\/Recettes\/filets-de-canard-aux-olives\/","title":{"rendered":"Filets de Canard aux olives"},"content":{"rendered":"<p class=\"paragraph_style_1\">Pour 6 personnes<\/p>\n<p class=\"paragraph_style_2\">Ingr\u00e9dients :<\/p>\n<ul>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">4 magrets ou filets de canard<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">150g d\u2019olives vertes<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">4 cuill\u00e8res d\u2019huile,sel,poivre<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">2 cuill\u00e8res \u00e0 soupe de vinaigre balsamique<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">2 cuill\u00e8res \u00e0 potage de fond de volaille d\u00e9shydrat\u00e9<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">8 tranches de Jambon cru de Bayonne ou de Parme<\/p>\n<\/li>\n<\/ul>\n<p class=\"paragraph_style_5\">\u00a0\u00a0\u00a0<span class=\"style_1\">Farce<\/span>:<\/p>\n<ul>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">100g de veau<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">100g de porc<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">50g de foie de volaille<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">2 cuill\u00e8res d\u2019huile d\u2019olive<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">3 tranches de pain de mie<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">10cl de lait<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">2 gousses d\u2019ail<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">10 olives vertes d\u00e9noyaut\u00e9es<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">sel( tr\u00e8s peu, le jambon \u00e9tant d\u00e9j\u00e0 sal\u00e9)<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">poivre<\/p>\n<\/li>\n<\/ul>\n<p class=\"paragraph_style_3\"><span class=\"style_2\">Pr\u00e9paration :<\/span><\/p>\n<p class=\"paragraph_style_6\">Enlever la peau des filets de canard.<\/p>\n<p class=\"paragraph_style_6\">Les fendre en deux dans l\u2019\u00e9paisseur sans aller jusqu\u2019au bout, pour obtenir une seule tranche,<\/p>\n<p class=\"paragraph_style_6\">bien aplatir entre 2 feuilles de film alimentaire.<\/p>\n<p class=\"paragraph_style_6\"><span class=\"style_3\">Faire la farce<\/span>: faire tremper le pain dans le lait,<\/p>\n<p class=\"paragraph_style_6\">\u00e9goutter puis mixer avec tous les ingr\u00e9dients de la farce.<\/p>\n<p class=\"paragraph_style_6\">Etaler sur chaque filet 2 tranches de jambon, puis une couche de farce.<\/p>\n<p class=\"paragraph_style_6\">Rouler les filets , ficeler.<\/p>\n<p class=\"paragraph_style_6\">Faire saisir de tous cot\u00e9s les filets, dans de l\u2019huile, couvrir, puis continuer la cuisson au four pendant 15 mn \u00e0 180\u00b0( th6 ). Le temps pour saisir + le temps de cuisson dans le four ne doit pas exc\u00e9der 30 mn.<\/p>\n<p class=\"paragraph_style_6\">Retirer les filets de la cocotte, les couvrir et r\u00e9server au chaud.<\/p>\n<p class=\"paragraph_style_6\">Diluer le fond de volaille dans 20cl d\u2019eau et porter \u00e0 \u00e9bullition. R\u00e9server.<\/p>\n<p class=\"paragraph_style_6\">D\u00e9glacer la cocotte, avec le vinaigre balsamique + le fond de volaille, porter \u00e0 \u00e9bullition pendant 2 mn, la sauce doit avoir un aspect sirupeux.
