Retirer la viande, \u00e0 la place faire dorer les \u00e9chalotes hach\u00e9es + les carottes en rondelles.<\/p>\n<p class=\"paragraph_style_5\">Remettre la viande dans la cocotte, ajouter l\u2019ail hach\u00e9e, le bouquet garni, le cognac, le vin, le sel, le poivre. Porter \u00e0 \u00e9bullition.<\/p>\n<p class=\"paragraph_style_5\">Couvrir et laisser cuire au four pendant 3 h 1\u20442. Au d\u00e9but, Th 7 pendant 1\u20442 h, puis Th 5.<\/p>\n<p class=\"paragraph_style_5\">Faire dorer les c\u00e8pes coup\u00e9s en petits morceaux dans un m\u00e9lange beurre- huile.<\/p>\n<p class=\"paragraph_style_5\">1\u20442 heure avant la fin de la cuisson de la viande, sortir la cocotte du four, ajouter les c\u00e8pes + la ma\u00efzena d\u00e9lay\u00e9e dans un peu d\u2019eau froide. Remuer. Remettre au four pour 1\u20442 heure.<\/p>\n<p class=\"paragraph_style_5\">Peut de faire la veille.
