{"id":767,"date":"2010-10-01T09:25:16","date_gmt":"2010-10-01T07:25:16","guid":{"rendered":"http:\/\/www.alcollot.fr\/Recettes\/?p=767"},"modified":"2019-10-19T16:13:34","modified_gmt":"2019-10-19T14:13:34","slug":"soles-en-mousseline-de-brocolis","status":"publish","type":"post","link":"https:\/\/www.alcollot.fr\/Recettes\/soles-en-mousseline-de-brocolis\/","title":{"rendered":"Soles en mousseline de brocolis"},"content":{"rendered":"<p class=\"paragraph_style_1\">Pour 4 personnes<\/p>\n<p class=\"paragraph_style_2\">Ingr\u00e9dients :<\/p>\n<ul>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">12 filets de soles<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">200g de brocolis<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">1 oeuf<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">100g de beurre<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">50g de cr\u00e8me<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">50g d\u2019oignons hach\u00e9s<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">100g de riz (arborio)<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">1l de fumet de poisson<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">8 gambas<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">100g de crevettes grises<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">40g de parmesan<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">Garniture aromatique : 1 oignon + 2 carottes + 50g de c\u00e9leri + 2 gousses d\u2019ail + persil + laurier + sel + poivre<\/p>\n<\/li>\n<\/ul>\n<p class=\"paragraph_style_1\"><span class=\"style_1\">Pr\u00e9paration :<\/span><\/p>\n<p class=\"paragraph_style_4\">Laver les filets de soles. R\u00e9server sur du papier absorbant.<\/p>\n<p class=\"paragraph_style_4\">Cuire les brocolis \u00e0 la vapeur. Mixer en ajoutant l\u2019\u0153uf + la cr\u00e8me + le sel + le poivre. Aplatir les filets de soles. Assaisonner et recouvrir chacun d\u2019entre eux avec la cr\u00e8me de brocolis, puis les rouler sur eux-m\u00eames. Les envelopper chacun dans du papier film en serrant puis cuire pendant 5 mns \u00e0 la vapeur.<\/p>\n<p class=\"paragraph_style_4\"><span class=\"style_2\">Risotto<\/span><\/p>\n<p class=\"paragraph_style_4\">Suer l\u2019oignon hach\u00e9 dans un peu de beurre. Ajouter le riz, nacrer pendant 1 \u00e0 2 mns jusqu\u2019\u00e0 ce qu\u2019il devienne translucide. Verser petit \u00e0 petit le fumet de poisson. Cuire pendant 10 mns. Ajouter les crevettes grises d\u00e9cortiqu\u00e9es et le parmesan.<\/p>\n<p class=\"paragraph_style_5\">Sauce<\/p>\n<p class=\"paragraph_style_4\">D\u00e9cortiquer les gambas. Faire revenir les carapaces dans un peu d\u2019huile, ajouter la garniture aromatique. Mouiller avec du fumet de poisson \u00e0 hauteur, laisser cuire doucement pendant 45 mns. Chinoiser (passer) assaisonner et monter au beurre (100g) au moment de servir.<\/p>\n<p class=\"paragraph_style_6\">Pr\u00e9sentation :<\/p>\n<p class=\"paragraph_style_4\">Sur une assiette, dresser le risotto (moul\u00e9 dans des petits moules ou tasses, ou \u00e0 l\u2019aide d\u2019emporte-pi\u00e8ces).
