{"id":749,"date":"2019-05-29T09:18:05","date_gmt":"2019-05-29T07:18:05","guid":{"rendered":"http:\/\/www.alcollot.fr\/Recettes\/?p=749"},"modified":"2023-01-25T10:07:04","modified_gmt":"2023-01-25T09:07:04","slug":"cassoulet-de-castelnaudary","status":"publish","type":"post","link":"https:\/\/www.alcollot.fr\/Recettes\/cassoulet-de-castelnaudary\/","title":{"rendered":"Cassoulet de Castelnaudary"},"content":{"rendered":"<p class=\"paragraph_style_1\">Pour 12 personnes<\/p>\n<p class=\"paragraph_style_2\">Ingr\u00e9dients :<\/p>\n<ul>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">1,5kg de haricots secs blancs<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">3 carottes<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">1 oignon piqu\u00e9 de 3 clous de girofle<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">300g d\u2019oignons hach\u00e9s<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">2 bouquets garnis (laurier, persil, thym)<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">250g de graisse d\u2019oie<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">2 boites de tomates concass\u00e9es de 400g<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">500g de lard de poitrine fra\u00eeche<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">200g de couennes de lard frais (facultatif)<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\"><span class=\"Puce\">2<\/span>\u00a0filets mignons de porc<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">1 \u00e9paule d\u2019agneau d\u00e9soss\u00e9e<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">8 morceaux de confit de canard<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">1 saucisson \u00e0 l\u2019ail<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">Chapelure, sel, poivre<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">5 gousses d\u2019ail<\/p>\n<\/li>\n<\/ul>\n<p class=\"paragraph_style_1\"><span class=\"style_1\">Pr\u00e9paration :<\/span><\/p>\n<p class=\"paragraph_style_4\"><span class=\"style_2\">La veille<\/span>\u00a0: Faire tremper les haricots dans de l\u2019eau froide.<\/p>\n<p class=\"paragraph_style_4\"><span class=\"style_2\">Le jour m\u00eame<\/span>\u00a0:<\/p>\n<p class=\"paragraph_style_4\">Ajouter aux haricots 100 gr de graisse d\u2019oie + la poitrine fra\u00eeche + les couennes + les carottes en rondelles + l\u2019oignon piqu\u00e9 + 3 gousses d\u2019ail + un bouquet garni + sel + poivre.<\/p>\n<p class=\"paragraph_style_4\">Recouvrir avec de l\u2019eau froide\u00a0 et faire cuire \u00e0 feu doux pendant 1 heure 30.<\/p>\n<p class=\"paragraph_style_4\">Dans une sauteuse, faire revenir dans la graisse d\u2019oie, l\u2019\u00e9paule d\u2019agneau, les filets de porc, sortir les viandes et r\u00e9server.<\/p>\n<p class=\"paragraph_style_4\">Dans la sauteuse, faire revenir les oignons hach\u00e9s, ajouter l\u2019ail + le bouquet garni + les tomates concass\u00e9es + sel + poivre.<\/p>\n<p class=\"paragraph_style_4\">Ajouter les viandes et faire cuire \u00e0 feu doux pendant 1 heure.<\/p>\n<p class=\"paragraph_style_4\">Retirer les viandes et les l\u00e9gumes qui ont cuit dans les haricots.<\/p>\n<p class=\"paragraph_style_4\">Couper l\u2019agneau et le porc en tranches ou en morceaux.<\/p>\n<p class=\"paragraph_style_4\">Faire fondre, dans une sauteuse, le confit et l\u2019\u00e9goutter sur du papier absorbant.<\/p>\n<p class=\"paragraph_style_4\">Dans un grand plat en terre allant au four, disposer les haricots et les viandes par couches.
