{"id":669,"date":"2010-10-17T15:53:41","date_gmt":"2010-10-17T13:53:41","guid":{"rendered":"http:\/\/www.alcollot.fr\/Recettes\/?p=669"},"modified":"2022-10-03T11:29:04","modified_gmt":"2022-10-03T09:29:04","slug":"royale-de-cepes-sur-consomme","status":"publish","type":"post","link":"https:\/\/www.alcollot.fr\/Recettes\/royale-de-cepes-sur-consomme\/","title":{"rendered":"Royale de c\u00e8pes sur consomm\u00e9"},"content":{"rendered":"<p class=\"paragraph_style_1\">Pour 8 personnes.<\/p>\n<p class=\"paragraph_style_2\">Ingr\u00e9dients :<\/p>\n<ul>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">5 oeufs entiers<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">3 jaunes d\u2019oeufs<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">50 cl de cr\u00e8me fra\u00eeche liquide<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">20 cl de lait<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">sel, poivre<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">400 g de c\u00e8pes frais ou jeunes c\u00e8pes surgel\u00e9s<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">700g de paleron (b\u0153uf)<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">6 carottes -1 poireau &#8211; 1 oignon<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">100 g de c\u00e9leri rave ou une branche de c\u00e9leri<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">1 feuille de laurier &#8211; 2 clous de girofle<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">6 cuill\u00e8res d\u2019huile<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">50 g de beurre &#8211; 10 cl de cr\u00e8me liquide<\/p>\n<\/li>\n<\/ul>\n<p class=\"paragraph_style_1\"><span class=\"style_1\">Pr\u00e9paration :<\/span><\/p>\n<p class=\"paragraph_style_1\"><span class=\"style_2\">Consomm\u00e9<\/span>\u00a0:<\/p>\n<p class=\"paragraph_style_1\">Dans une cocotte faire chauffer 4 cuill\u00e8res d\u2019huile, y faire r\u00f4tir un paleron sur toutes les faces, il faut que la viande soit bien brune mais pas br\u00fbl\u00e9e, ajouter 2l d\u2019eau puis tous les \u00e9l\u00e9ments du bouillon.<\/p>\n<p class=\"paragraph_style_1\">Faire cuire pendant 1 heure \u00e0 feu moyen puis \u00e0 feu plus fort pour obtenir un consomm\u00e9 bien concentr\u00e9. A la fin, il ne doit rester qu\u2019un litre de bouillon(ne pas trop saler, tenir compte de la r\u00e9duction).Peut se faire la veille.<\/p>\n<p class=\"paragraph_style_1\"><span class=\"style_2\">Royale<\/span>\u00a0:<\/p>\n<p class=\"paragraph_style_1\">Faire chauffer la cr\u00e8me + le lait. Retirer du feu et ajouter 100g de c\u00e8pes coupes en petits morceaux et laisser mac\u00e9rer pendant 2 heures.<\/p>\n<p class=\"paragraph_style_1\">Passer \u00e0 travers un chinois en pressant bien sur les c\u00e8pes pour en r\u00e9cup\u00e9rer tous les sucs. Battre ensemble les \u0153ufs entiers + les jaunes + le sel et poivre.<\/p>\n<p class=\"paragraph_style_1\">Ajouter le m\u00e9lange : cr\u00e8me, lait ti\u00e8de. Verser dans des ramequins chemises de film alimentaire.<\/p>\n<p class=\"paragraph_style_1\">Faire cuire au bain-marie dans un four pr\u00e9chauff\u00e9 \u00e0 120\u00b0(th4) en recouvrant les ramequins d\u2019aluminium,pendant environ 30mn.<\/p>\n<p class=\"paragraph_style_1\">V\u00e9rifier la cuisson avec la pointe d\u2019un couteau, les temps varient d\u2019un four \u00e0 l\u2019autre<\/p>\n<p class=\"paragraph_style_1\">La royale doit avoir la consistance d\u2019un flan<\/p>\n<p class=\"paragraph_style_1\">Peut se faire la veille et se r\u00e9chauffer dans un four doux en temps voulu.<\/p>\n<p class=\"paragraph_style_1\">Au dernier moment, saisir les c\u00e8pes restant dans un m\u00e9lange beurre-huile, dans une grande po\u00eale pour qu\u2019ils ne se chevauchent pas et soient bien r\u00f4tis. Saler<\/p>\n<p class=\"paragraph_style_2\">Pr\u00e9sentation :<\/p>\n<p class=\"paragraph_style_1\">Dans une assiette creuse ou une coupelle, d\u00e9mouler le flan puis verser d\u00e9licatement autour le consomm\u00e9 tr\u00e8s chaud.
