{"id":660,"date":"2013-01-20T14:53:09","date_gmt":"2013-01-20T13:53:09","guid":{"rendered":"http:\/\/www.alcollot.fr\/Recettes\/?p=660"},"modified":"2019-10-19T15:45:13","modified_gmt":"2019-10-19T13:45:13","slug":"tarte-fine-asperges-et-supremes-de-volaille-emulsion-de-cepes","status":"publish","type":"post","link":"https:\/\/www.alcollot.fr\/Recettes\/tarte-fine-asperges-et-supremes-de-volaille-emulsion-de-cepes\/","title":{"rendered":"Tarte fine, asperges et supr\u00eames de volaille, \u00e9mulsion de c\u00e8pes"},"content":{"rendered":"<p class=\"paragraph_style_1\">Pour 6 personnes.<\/p>\n<p class=\"paragraph_style_2\">Ingr\u00e9dients :<\/p>\n<ul>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">6 cercles de p\u00e2te feuillet\u00e9e de 15 cm de diam\u00e8tre<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">18 asperges (moyennes)<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">4 oeufs entiers + 2 jaunes d\u2019oeuf<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">20cl de cr\u00e8me fraiche<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">100g de pulpe d\u2019oignon<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">sel-poivre<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">2 filets de poulet<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">beurre<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">2 petites courgettes<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">1 poign\u00e9e de diff\u00e9rentes sortes de salade ou<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">des fleurs comestibles<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">100g de c\u00e8pes (surgel\u00e9s)<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">1 bouillon cube de volaille + 30cl d\u2019eau<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">vinaigrette<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">6 branches de lard fum\u00e9 tr\u00e8s fines (Herta)<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">15cl de cr\u00e8me fraiche fouett\u00e9e<\/p>\n<\/li>\n<\/ul>\n<p class=\"paragraph_style_4\"><span class=\"style_1\">Pr\u00e9paration :<\/span><\/p>\n<p class=\"paragraph_style_5\">Faire s\u00e9cher les tranches de lard entre deux feuilles de papier cuisson dans un four<\/p>\n<p class=\"paragraph_style_5\">pr\u00e9chauff\u00e9 \u00e0 180\u00b0 pendant 15 mn.<\/p>\n<p class=\"paragraph_style_5\">Avec une fourchette, piquer le centre des cercles en p\u00e2te feuillet\u00e9e jusqu\u2019\u00e0 1cm du bord,<\/p>\n<p class=\"paragraph_style_5\">cuire dans un four pr\u00e9chauff\u00e9 \u00e0 180\u00b0 jusqu\u2019\u00e0 coloration (environ 10 \u00e0 15 mn)<\/p>\n<p class=\"paragraph_style_6\">Flan :<\/p>\n<p class=\"paragraph_style_5\">m\u00e9langer les oeufs entiers + les jaunes + la cr\u00e8me ti\u00e9die+ les oignons hach\u00e9s et pass\u00e9s<\/p>\n<p class=\"paragraph_style_5\">au beurre sans coloration + sel + poivre. Verser dans de petits moules<\/p>\n<p class=\"paragraph_style_5\">chemis\u00e9s de film alimentaire (ne d\u00e9passant pas 5 cm de diam\u00e8tre).<\/p>\n<p class=\"paragraph_style_5\">Cuire au bain-marie \u00e0 100\u00b0 pendant 40mn. V\u00e9rifier la cuisson avec une pointe de couteau.<\/p>\n<p class=\"paragraph_style_5\">Les petits moules peuvent \u00eatre des tasses \u00e0 caf\u00e9.<\/p>\n<p class=\"paragraph_style_6\">Le poulet :<\/p>\n<p class=\"paragraph_style_5\">sur une planche \u00e0 d\u00e9couper, \u00e9taler les filets de poulet, saler, poivrer. Les rouler et les<\/p>\n<p class=\"paragraph_style_5\">emballer dans du film alimentaire. Poser dans un cuit vapeur ou dans une passoire<\/p>\n<p class=\"paragraph_style_5\">au dessus d\u2019une casserole d\u2019eau fr\u00e9missante et cuire pendant 20mn en les retournant<\/p>\n<p class=\"paragraph_style_5\">plusieurs fois. Laisser refroidir, d\u00e9barrasser du film puis saisir vivement<\/p>\n<p class=\"paragraph_style_5\">de chaque c\u00f4t\u00e9 dans du beurre et couper en petites rondelles. R\u00e9server au chaud.<\/p>\n<p class=\"paragraph_style_6\">Les asperges:<\/p>\n<p class=\"paragraph_style_5\">les \u00e9plucher (ne prendre que 10cm de t\u00eate) et les faire cuire dans de l\u2019eau sal\u00e9e pendant 10mn.<\/p>\n<p class=\"paragraph_style_5\">Egoutter et r\u00e9server. Couper les courgettes en tron\u00e7ons de 3cm,<\/p>\n<p class=\"paragraph_style_5\">les blanchir dans de l\u2019eau bouillante sal\u00e9e pendant 8mn, \u00e9goutter et rafraichir<\/p>\n<p class=\"paragraph_style_5\">dans de l\u2019eau froide. Creuser le centre des courgettes pour faire comme un petit vase<\/p>\n<p class=\"paragraph_style_5\">dans lequel on piquera de petites feuilles de salade ou les fleurs.<\/p>\n<p class=\"paragraph_style_5\"><span class=\"style_2\">Sauce :<br \/>\n<\/span><\/p>\n<p class=\"paragraph_style_5\">faire sauter les c\u00e8pes dans du beurre, ajouter 1 \u00e9chalote hach\u00e9e, laisser fondre<\/p>\n<p class=\"paragraph_style_5\">pendant 5mn, ajouter le consomm\u00e9 de volaille (1 cube + 30cl d\u2019eau). laisser cuire<\/p>\n<p class=\"paragraph_style_5\">pendant 10mn, \u00e9mulsionner avec un robot plongeant en ajoutant 15cl de cr\u00e8me fraiche fouett\u00e9e.<\/p>\n<p class=\"paragraph_style_5\">Tout peut se pr\u00e9parer la veille, sauf les filets de volaille qui seront saisis au dernier moment.<\/p>\n<p class=\"paragraph_style_5\">Tout doit \u00eatre chaud sauf la salade&#8230;<\/p>\n<p class=\"paragraph_style_5\"><span class=\"style_2\">Pr\u00e9sentation :<\/span><\/p>\n<p class=\"paragraph_style_5\">dans une assiette, dresser un cercle de p\u00e2te, poser au centre le flan, d\u2019un cot\u00e9 poser<\/p>\n<p class=\"paragraph_style_5\">3 petits supr\u00eames de volaille, de l\u2019autre c\u00f4t\u00e9 3 pointes d\u2019asperges debout et un tron\u00e7on<\/p>\n<p class=\"paragraph_style_5\">de courgette dans lequel seront piqu\u00e9es de petites feuilles de salade, vaporis\u00e9es de vinaigrette<\/p>\n<p class=\"paragraph_style_5\">et poser un morceau de bacon sur le flan.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Pour 6 personnes.
