{"id":652,"date":"2013-11-08T14:50:11","date_gmt":"2013-11-08T13:50:11","guid":{"rendered":"http:\/\/www.alcollot.fr\/Recettes\/?p=652"},"modified":"2019-10-19T15:47:05","modified_gmt":"2019-10-19T13:47:05","slug":"creme-de-celeri-sur-royale-de-foie-gras","status":"publish","type":"post","link":"https:\/\/www.alcollot.fr\/Recettes\/creme-de-celeri-sur-royale-de-foie-gras\/","title":{"rendered":"Cr\u00e8me de c\u00e9leri sur royale de foie gras"},"content":{"rendered":"<p class=\"paragraph_style_1\">Pour 8 personnes.<\/p>\n<p class=\"paragraph_style_2\">Ingr\u00e9dients :<\/p>\n<p class=\"paragraph_style_3\">Royale :<\/p>\n<ul>\n<li class=\"full-width\">\n<p class=\"paragraph_style_5\">180g de foie gras cuit<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_5\">3 oeufs<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_5\">25cl de cr\u00e8me liquide<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_5\">sel-poivre<\/p>\n<\/li>\n<\/ul>\n<p class=\"paragraph_style_6\">Cr\u00e8me de c\u00e9leri:<\/p>\n<ul>\n<li class=\"full-width\">\n<p class=\"paragraph_style_5\">250g de c\u00e9leri-rave + 150g (d\u00e9cor)<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_5\">1 bouillon cube de poule + 20cl d\u2019eau<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_5\">15cl de cr\u00e8me enti\u00e8re \u00e9paisse<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_5\">20g de beurre sel-poivre<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_5\">4 tranches de pain de mie<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_5\">ciboulette<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_5\">beurre-huile<\/p>\n<\/li>\n<\/ul>\n<p class=\"paragraph_style_9\"><span class=\"style_1\">Pr\u00e9paration :<\/span><\/p>\n<p class=\"paragraph_style_10\">tout peut se pr\u00e9parer la veille et sera r\u00e9chauff\u00e9 au moment du repas.<\/p>\n<p class=\"paragraph_style_11\">Royale :<\/p>\n<p class=\"paragraph_style_10\">faire ti\u00e9dir la cr\u00e8me.<\/p>\n<p class=\"paragraph_style_10\">dans un blender (mixer haut), mixer le foie gras, la cr\u00e8me, le sel et le poivre puis ajouter les oeufs.<\/p>\n<p class=\"paragraph_style_8\">Verser dans 8 verrines ou tasses \u00e0 caf\u00e9. Remplir au 2\/3.<\/p>\n<p class=\"paragraph_style_8\">Recouvrir d\u2019alu et cuire au bain-marie dans un four pr\u00e9-chauff\u00e9 \u00e0 100-120\u00b0<\/p>\n<p class=\"paragraph_style_8\">( l\u2019eau d\u2019un bain-marie est toujours chaude au d\u00e9part).<\/p>\n<p class=\"paragraph_style_8\">pendant 45 \u00e0 60 mn, la dur\u00e9e variant suivant la forme des verrines.<\/p>\n<p class=\"paragraph_style_8\">V\u00e9rifier que les royales sont cuites avec la pointe d\u2019un couteau,<\/p>\n<p class=\"paragraph_style_8\">la consistance doit \u00eatre celle d\u2019un flan.<\/p>\n<p class=\"paragraph_style_8\">R\u00e9server jusqu\u2019au lendemain, ces royales seront r\u00e9chauff\u00e9es au bain-marie dans un four \u00e0 90\u00b0.<\/p>\n<p class=\"paragraph_style_8\"><span class=\"style_2\">Cr\u00e8me de c\u00e9leri :<\/span><\/p>\n<p class=\"paragraph_style_8\">couper le c\u00e9leri en petits cubes, les faire suer dans le beurre puis ajouter<\/p>\n<p class=\"paragraph_style_8\">le bouillon de volaille (cube + 20cl d\u2019eau), sel, poivre.<\/p>\n<p class=\"paragraph_style_8\">Cuire \u00e0 feu doux pendant 30mn, mixer dans un blender en ajoutant la cr\u00e8me<\/p>\n<p class=\"paragraph_style_8\">pour obtenir une cr\u00e8me onctueuse. R\u00e9server au frais.<\/p>\n<p class=\"paragraph_style_12\">Garniture :<\/p>\n<p class=\"paragraph_style_8\">tailler le pain de mie en tr\u00e8s petits cubes, les faire revenir dans du beurre + huile<\/p>\n<p class=\"paragraph_style_8\">en les remuant sans arr\u00eat jusqu\u2019\u00e0 ce qu\u2019ils s\u00e8chent. R\u00e9server.<\/p>\n<p class=\"paragraph_style_8\">Tailler le c\u00e9leri (150g) en tr\u00e8s petits cubes, les blanchir pendant 3mn, les saler. R\u00e9server.<\/p>\n<p class=\"paragraph_style_8\"><span class=\"style_2\">Pour servir :<br \/>\n<\/span><\/p>\n<p class=\"paragraph_style_8\">passer les cubes de c\u00e9leri au micro-ondes pour les r\u00e9chauffer.<\/p>\n<p class=\"paragraph_style_8\">R\u00e9chauffer les royales au bain-marie.<\/p>\n<p class=\"paragraph_style_8\">R\u00e9chauffer la cr\u00e8me de c\u00e9leri.<\/p>\n<p class=\"paragraph_style_8\">R\u00e9chauffer les petits croutons au four.<\/p>\n<p class=\"paragraph_style_8\">Napper la royale avec la cr\u00e8me de c\u00e9leri sur 1cm et demi de hauteur<\/p>\n<p class=\"paragraph_style_8\">et parsemer sur le dessus les croutons,<\/p>\n<p class=\"paragraph_style_8\">les petits cubes de c\u00e9leri et la ciboulette.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Pour 8 personnes.
