{"id":635,"date":"2015-05-14T14:35:49","date_gmt":"2015-05-14T12:35:49","guid":{"rendered":"http:\/\/www.alcollot.fr\/Recettes\/?p=635"},"modified":"2019-10-19T15:50:44","modified_gmt":"2019-10-19T13:50:44","slug":"terrine-de-legumes-aux-2-sauces","status":"publish","type":"post","link":"https:\/\/www.alcollot.fr\/Recettes\/terrine-de-legumes-aux-2-sauces\/","title":{"rendered":"Terrine de l\u00e9gumes aux 2 sauces"},"content":{"rendered":"<p class=\"paragraph_style_1\">Pour 8 \u00e0 10 personnes.<\/p>\n<p class=\"paragraph_style_2\">Ingr\u00e9dients :<\/p>\n<ul>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">500g de jambon cuit non d\u00e9graiss\u00e9 (un jambon sans graisse donnera une pr\u00e9paration granuleuse)<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">4oeufs &#8211; 120g de pain de mie sans cro\u00fbte<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">15cl de lait &#8211; 2 cuiller\u00e9es \u00e0 potage de cr\u00e8me \u00e9paisse<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">sel, poivre &#8211; 1 cuiller\u00e9e \u00e0 potage de concentr\u00e9 de tomate<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">12 tranches tr\u00e8s fines de lard fum\u00e9 (Herta)<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">300g de mini-carottes fraiches ou surgel\u00e9es 300g de<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">petits pois frais ou surgel\u00e9s<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">20 pointes d\u2019asperges vertes ou haricots verts<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">frais ou fonds d\u2019artichaut frais ou surgel\u00e9s<span class=\"style_1\"><br \/>\n<\/span><\/p>\n<\/li>\n<\/ul>\n<p class=\"paragraph_style_3\"><span class=\"style_1\">Sauces<\/span>\u00a0:<\/p>\n<ul>\n<li class=\"paragraph_style_3\">1 boite (400g) de tomates concass\u00e9es<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">4 cuill\u00e8res \u00e0 potage d\u2019huile d\u2019olive<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">sel-poivre-tabasco ou piment<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">basilic<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">1 cuiller\u00e9e \u00e0 potage de moutarde<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">200g de mayonnaise<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">20cl de cr\u00e8me fouett\u00e9e<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">sel-poivre-ciboulette<\/p>\n<\/li>\n<\/ul>\n<p class=\"paragraph_style_5\"><span class=\"style_2\">Pr\u00e9paration :<\/span><\/p>\n<p class=\"paragraph_style_6\">faire tremper la mie de pain dans le lait froid.<\/p>\n<p class=\"paragraph_style_6\">Dans un mixer, hacher le jambon puis ajouter les oeufs + la cr\u00e8me + la mie de pain tremp\u00e9e<\/p>\n<p class=\"paragraph_style_6\">+ sel + poivre + le concentr\u00e9 de tomate (pour la couleur).<\/p>\n<p class=\"paragraph_style_6\">Mixer pour obtenir un m\u00e9lange bien homog\u00e8ne. R\u00e9server au froid.<\/p>\n<p class=\"paragraph_style_6\">Dans une eau bouillante sal\u00e9e, plonger les l\u00e9gumes s\u00e9par\u00e9ment<\/p>\n<p class=\"paragraph_style_6\">pendant 3 mn environ \u00e0 partir de l\u2019\u00e9bullition. Ils doivent \u00eatre cuits mais croquants.<\/p>\n<p class=\"paragraph_style_6\">Les passer sous l\u2019eau froide. Graisser un moule \u00e0 cake, le chemiser avec les tranches de lard.<\/p>\n<p class=\"paragraph_style_6\">Etaler dans le fond une couche de farce puis une couche de carottes, puis de farce,<\/p>\n<p class=\"paragraph_style_6\">les petits pois, la farce etc&#8230;Rabattre les tranches de lard sur le dessus.<\/p>\n<p class=\"paragraph_style_6\">Recouvrir d\u2019un papier cuisson puis d\u2019alu. Cuire dans un bain-marie (chaud) \u00e0 180\u00b0\u00b0<\/p>\n<p class=\"paragraph_style_6\">pendant 30 mn, puis 30 mn \u00e0 150\u00b0.<\/p>\n<p class=\"paragraph_style_6\">V\u00e9rifier la cuisson avec une pointe de couteau. Laisser ti\u00e9dir dans le four \u00e9teint.<\/p>\n<p class=\"paragraph_style_6\">R\u00e9server au froid jusqu\u2019au lendemain. D\u00e9mouler et servir les sauces dans des sauci\u00e8res.<\/p>\n<p class=\"paragraph_style_6\"><span class=\"style_3\">Coulis de tomate<\/span>\u00a0: passer au mixer plongeant 1 boite (400g) de tomates concass\u00e9es<\/p>\n<p class=\"paragraph_style_6\">+ l\u2019huile d\u2019olive + sel + poivre, tabasco ou piment.. Au moment de servir, ajouter du basilic hach\u00e9.<\/p>\n<p class=\"paragraph_style_7\">Sauce mousseline :<\/p>\n<p class=\"paragraph_style_6\">Battre la cr\u00e8me pour obtenir une cr\u00e8me fouett\u00e9e.<\/p>\n<p class=\"paragraph_style_6\">Avec un fouet, m\u00e9langer la mayonnaise + la moutarde +le sel<\/p>\n<p class=\"paragraph_style_6\">+ le poivre et ajouter d\u00e9licatement la cr\u00e8me fouett\u00e9e.<\/p>\n<p class=\"paragraph_style_6\">Verser dans une sauci\u00e8re et parsemer le dessus avec de la ciboulette.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Pour 8 \u00e0 10 personnes.
