{"id":610,"date":"2010-09-29T14:21:18","date_gmt":"2010-09-29T12:21:18","guid":{"rendered":"http:\/\/www.alcollot.fr\/Recettes\/?p=610"},"modified":"2019-10-19T15:30:50","modified_gmt":"2019-10-19T13:30:50","slug":"terrine-de-faisan-aux-noix","status":"publish","type":"post","link":"https:\/\/www.alcollot.fr\/Recettes\/terrine-de-faisan-aux-noix\/","title":{"rendered":"Terrine de faisan aux noix"},"content":{"rendered":"<p class=\"paragraph_style_1\">Ingr\u00e9dients :<\/p>\n<ul>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">1 faisan ou 1 pintade<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">400g de poitrine de porc fra\u00eeche<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">5cl de porto<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">2cl de cognac<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">1 gousse d\u2019ail<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">2 \u00e9chalotes<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">2 oeufs<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">Thym, laurier, 10g de geni\u00e8vre<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">1 verre de vin blanc<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">Beurre, huile, huile de noix<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">Sel 20g au kg<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">poivre<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">100g de noix<\/p>\n<\/li>\n<\/ul>\n<p class=\"paragraph_style_2\">Pour le jus :<\/p>\n<ul>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">1 verre de vin blanc<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">1 carotte<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">1 oignon<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">1 tablette de bouillon de poule<\/p>\n<\/li>\n<\/ul>\n<p class=\"paragraph_style_4\"><span class=\"style_1\">Pr\u00e9paration :<\/span><\/p>\n<p class=\"paragraph_style_6\">La veille<\/p>\n<p class=\"paragraph_style_5\">D\u00e9sosser le faisan, garder la carcasse, le foie, la peau<\/p>\n<p class=\"paragraph_style_5\">Napper les filets de faisan avec un filet de cognac, un filet de porto, de sel, de poivre.<\/p>\n<p class=\"paragraph_style_5\">Couvrir et r\u00e9server au frais.<\/p>\n<p class=\"paragraph_style_5\">Dans un saladier, d\u00e9poser le reste de la chair + le foie+ la peau + la poitrine de porc en petits morceaux, les arroser avec le reste du cognac et porto +sel + poivre +ail \u00e9cras\u00e9 + \u00e9chalotes coup\u00e9es en deux + thym + laurier. Couvrir et r\u00e9server au frais.<\/p>\n<p class=\"paragraph_style_5\">Avec les carcasses faire un jus = faire dorer les carcasses dans un m\u00e9lange beurre + huile. Ajouter les l\u00e9gumes en d\u00e9s, faire dorer.Verser le vin blanc + la tablette de bouillon + 30 cl d\u2019eau (cuire 40 mn \u00e0 feu doux). Filtrer, il ne doit rester que 3 \u00e0 4 cuill\u00e8re \u00e0 soupe de bouillon. R\u00e9server au frais.<\/p>\n<p class=\"paragraph_style_6\">Le lendemain<\/p>\n<p class=\"paragraph_style_5\">Pr\u00e9chauffer le four \u00e0 180 \u00b0. Dans une po\u00eale, faire revenir vivement les filets dans un m\u00e9lange beurre+huile.<\/p>\n<p class=\"paragraph_style_5\">Passer au mixer toutes les autres chairs (pas trop fin) + les \u00e9chalotes et ail hach\u00e9es fin.<\/p>\n<p class=\"paragraph_style_5\">Malaxer avec les mains les viandes + les \u0153ufs + le jus + 3 cl d\u2019huile de noix + les noix en petits morceaux + la marinade des viandes + le vin blanc.<\/p>\n<p class=\"paragraph_style_5\">Remplir une terrine, la poser dans un plat rempli d\u2019eau tr\u00e8s chaude.<\/p>\n<p class=\"paragraph_style_5\">Enfourner \u00e0 180 \u00b0 pendant 1\u20444 d\u2019heure puis baisser la temp\u00e9rature \u00e0 130\u00b0.
