{"id":550,"date":"2011-11-08T16:03:23","date_gmt":"2011-11-08T15:03:23","guid":{"rendered":"http:\/\/www.alcollot.fr\/Recettes\/?p=550"},"modified":"2019-10-19T15:03:53","modified_gmt":"2019-10-19T13:03:53","slug":"veloute-de-truite-rose-a-la-creme-depinard","status":"publish","type":"post","link":"https:\/\/www.alcollot.fr\/Recettes\/veloute-de-truite-rose-a-la-creme-depinard\/","title":{"rendered":"Velout\u00e9 de truite rose \u00e0 la cr\u00e8me d\u2019\u00e9pinard"},"content":{"rendered":"<p class=\"paragraph_style_1\">Pour 8 personnes<\/p>\n<p class=\"paragraph_style_2\">Ingr\u00e9dients :<\/p>\n<ul>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">8 filets de truite(rivi\u00e8re)<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">100g de truite fum\u00e9e<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">100g de champignons de Paris<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">2 carottes<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">1 oignon<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">20cl de vin blanc sec<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">4 cuill\u00e8res de fumet de poisson d\u00e9shydrat\u00e9 dilu\u00e9 dans 80cl d\u2019eau<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">1 zeste d\u2019orange<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">4 gousses d\u2019ail<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">100g de betteraves rouges<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">20cl de cr\u00e8me fraiche<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">100g de beurre<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">1 bouquet garni(persil + laurier+ thym)<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">sel-poivre<\/p>\n<\/li>\n<\/ul>\n<p class=\"paragraph_style_1\">\u00a0\u00a0\u00a0 Cr\u00e8me d\u2019\u00e9pinards:<\/p>\n<ul>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">100g d\u2019\u00e9pinards hach\u00e9s surgel\u00e9s<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">15cl de cr\u00e8me fleurette<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">sel<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">graines de s\u00e9same<\/p>\n<\/li>\n<\/ul>\n<p class=\"paragraph_style_4\">\n<p class=\"paragraph_style_4\"><span class=\"style_1\">Pr\u00e9paration :<\/span><\/p>\n<p class=\"paragraph_style_5\">Couper la truite en petits tron\u00e7ons.<\/p>\n<p class=\"paragraph_style_5\">Eplucher l\u2019oignon, les carottes et les champignons, les couper en petits cubes.<\/p>\n<p class=\"paragraph_style_5\">Mettre le beurre \u00e0 fondre dans une sauteuse et y faire revenir tous les l\u00e9gumes<\/p>\n<p class=\"paragraph_style_5\">jusqu\u2019\u00e0 ce qu\u2019ils soient transparents.<\/p>\n<p class=\"paragraph_style_5\">Ajouter la truite plus la truite fum\u00e9e en morceaux,<\/p>\n<p class=\"paragraph_style_5\">le vin blanc, le fumet de poisson, le zeste de l\u2019orange, le bouquet garni, l\u2019ail en morceaux,<\/p>\n<p class=\"paragraph_style_5\">le poivre, le sel (attention, la truite fum\u00e9e est sal\u00e9e).<\/p>\n<p class=\"paragraph_style_5\">Laisser mijoter 45mn puis ajouter la betterave rouge coup\u00e9e en petits morceaux,<\/p>\n<p class=\"paragraph_style_5\">laisser cuire environ 15mn.<\/p>\n<p class=\"paragraph_style_5\">Apr\u00e8s avoir bien \u00e9goutt\u00e9 les \u00e9pinards en les pressant entre les mains pour qu\u2019il<\/p>\n<p class=\"paragraph_style_5\">ne reste plus d\u2019eau, les incorporer \u00e0 la cr\u00e8me fleurette mont\u00e9e en chantilly.
