{"id":493,"date":"2014-02-20T15:18:01","date_gmt":"2014-02-20T14:18:01","guid":{"rendered":"http:\/\/www.alcollot.fr\/Recettes\/?p=493"},"modified":"2019-10-19T15:07:03","modified_gmt":"2019-10-19T13:07:03","slug":"fraicheur-de-crabe-sur-mousse-davocats","status":"publish","type":"post","link":"https:\/\/www.alcollot.fr\/Recettes\/fraicheur-de-crabe-sur-mousse-davocats\/","title":{"rendered":"Fraicheur de crabe sur mousse d\u2019avocats"},"content":{"rendered":"<p class=\"paragraph_style_1\">Pour 4 personnes<\/p>\n<p class=\"paragraph_style_1\">Ingr\u00e9dients :<\/p>\n<ul>\n<li class=\"full-width\">\n<p class=\"paragraph_style_2\">200g de chair de crabe<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_2\">1\/2 pomme granny smith<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_2\">1 cuill\u00e8re \u00e0 caf\u00e9 de raifort r\u00e2p\u00e9 (bocal)<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_2\">2 cuill\u00e8res \u00e0 potage de mayonnaise<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_2\">1 \u00e9chalote hach\u00e9e<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_2\">1 cuill\u00e8re \u00e0 caf\u00e9 de ciboulette<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_2\">1 cuill\u00e8re \u00e0 caf\u00e9 de coriandre<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_2\">1 cuill\u00e8re \u00e0 caf\u00e9 de menthe<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_2\">( fraiches ou surgel\u00e9es)<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_2\">sel-poivre<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_2\">2 avocats<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_2\">2 cuill\u00e8res \u00e0 potage de mascarpone<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_2\">1 jus de citron vert<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_2\">500 g de pommes de terre (rattes)<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_2\">1\/2 cube de bouillon de poule<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_2\">1 capsule de safran<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_2\">1 cuill\u00e8re \u00e0 caf\u00e9 de curcuma<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_2\">tomates cerise (d\u00e9coration)<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_2\">jeunes pousses (basilic, \u00e9pinard, etc&#8230;)<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_2\">pour la d\u00e9co.<\/p>\n<\/li>\n<\/ul>\n<p class=\"paragraph_style_4\">Pr\u00e9paration :<\/p>\n<p class=\"paragraph_style_3\">\u00e9plucher les pommes de terre, les couper en rondelles<\/p>\n<p class=\"paragraph_style_3\">de 0,5cm d\u2019\u00e9paisseur, puis les tailler avec un emporte-pi\u00e8ce<\/p>\n<p class=\"paragraph_style_3\">rond de 2cm de diam\u00e8tre.<\/p>\n<p class=\"paragraph_style_3\">Porter \u00e0 \u00e9bullition 30cl d\u2019eau + sel + le bouillon +le safran + le curcuma.<\/p>\n<p class=\"paragraph_style_3\">Ajouter les pommes de terre et faire cuire pendant 15mn.<\/p>\n<p class=\"paragraph_style_3\">R\u00e9server dans le jus au frais.<\/p>\n<p class=\"paragraph_style_3\">M\u00e9langer le crabe + la mayonnaise + le raifort + les herbes +<\/p>\n<p class=\"paragraph_style_3\">la pomme coup\u00e9e en mini-cubes + sel + poivre + l\u2019\u00e9chalote.<\/p>\n<p class=\"paragraph_style_3\">R\u00e9server au frigo.<\/p>\n<p class=\"paragraph_style_3\">Eplucher les avocats mixer la chair + le jus de citron + le mascarpone + sel + poivre.<\/p>\n<p class=\"paragraph_style_3\">R\u00e9server au frigo.<\/p>\n<p class=\"paragraph_style_3\">Au moment de dresser les assiettes. Verser la mousse d\u2019avocat<\/p>\n<p class=\"paragraph_style_3\">dans une poche \u00e0 douille et former sur le fond de l\u2019assiette un carr\u00e9<\/p>\n<p class=\"paragraph_style_3\">de 10-12 cm de c\u00f4t\u00e9 ou faire une spirale.
