{"id":424,"date":"2014-05-10T12:14:59","date_gmt":"2014-05-10T10:14:59","guid":{"rendered":"http:\/\/www.alcollot.fr\/Recettes\/?p=424"},"modified":"2019-10-19T13:01:56","modified_gmt":"2019-10-19T11:01:56","slug":"cappucino-de-pomme-de-terre-aux-truffes","status":"publish","type":"post","link":"https:\/\/www.alcollot.fr\/Recettes\/cappucino-de-pomme-de-terre-aux-truffes\/","title":{"rendered":"Cappucino de pomme de terre aux truffes"},"content":{"rendered":"<p class=\"paragraph_style_1\">pour 6 personnes<\/p>\n<p class=\"paragraph_style_2\">Ingr\u00e9dients :<\/p>\n<ul>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">2 truffes (2 x 30g)<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">20 cl de cr\u00e8me enti\u00e8re liquide<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">250 g de pomme de terre \u00e9pluch\u00e9es<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">50g de beurre<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">5cl de lait<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">1 cuill\u00e8re \u00e0 potage de fond de volaille<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">10cl d\u2019eau<\/p>\n<\/li>\n<\/ul>\n<p class=\"paragraph_style_4\"><span class=\"style_1\">Pr\u00e9paration<\/span> :<\/p>\n<p class=\"paragraph_style_5\">La veille, faire mariner les truffes coup\u00e9es en 2 dans les 20cl de cr\u00e8me.<\/p>\n<p class=\"paragraph_style_5\">Le lendemain, \u00e9plucher les pommes de terre, les faire cuire \u00e0 la vapeur<\/p>\n<p class=\"paragraph_style_5\">puis les passer au moulin \u00e0 l\u00e9gumes.<\/p>\n<p class=\"paragraph_style_5\">Ajouter 50g de beurre + 5 cl de lait + 5 cl de cr\u00e8me prise dans les 20cl aux truffes.<\/p>\n<p class=\"paragraph_style_5\">D\u00e9layer le fond de volaille dans 10cl d\u2019eau et porter \u00e0 \u00e9bullition.<\/p>\n<p class=\"paragraph_style_5\">Hacher les truffes dans un hachoir \u00e0 \u00e9pices et les ajouter \u00e0 la pur\u00e9e chaude. R\u00e9server au bain-marie.<\/p>\n<p class=\"paragraph_style_5\">Ajouter le reste de la cr\u00e8me au fond de volaille et passer au chinois tr\u00e8s fin,<\/p>\n<p class=\"paragraph_style_5\">puis verser dans un syphon.
