Remuer \u00e9nergiquement avec une cuill\u00e8re en bois<\/p>\n<p class=\"paragraph_style_5\">sur feu doux jusqu\u2019\u00e0 ce que\u00a0 la p\u00e2te se d\u00e9tache des parois.<\/p>\n<p class=\"paragraph_style_5\">Verser cette p\u00e2te dans le bol d\u2019un batteur et ajouter un oeuf. Battre jusqu\u2019\u00e0 ce qu\u2019il soit<\/p>\n<p class=\"paragraph_style_5\">parfaitement int\u00e9gr\u00e9 avant d\u2019ajouter le 2\u00e8me oeuf. R\u00e9p\u00e9ter l\u2019op\u00e9ration pour le 3\u00e8me et le 4\u00e8me oeuf.<br \/>\nVerser cette p\u00e2te dans une poche \u00e0 douille munie d\u2019une douille lisse ou cannel\u00e9e (1 \u00e0 2 cm).<\/p>\n<p class=\"paragraph_style_5\">Sur une plaque recouverte d\u2019un papier cuisson, former des petits d\u00f4mes de 2,5 cm de diam\u00e8tre,<\/p>\n<p class=\"paragraph_style_5\">les badigeonner de dorure (jaune d\u2019oeuf + eau) puis parsemer de graines de pavot.<\/p>\n<p class=\"paragraph_style_5\">Enfourner dans un four pr\u00e9chauff\u00e9 \u00e0 190\u00b0 pendant 15 mn sans ouvrir le four.<\/p>\n<p class=\"paragraph_style_5\">Prolonger la cuisson si les choux ne sont pas dor\u00e9s et bien secs au toucher.<\/p>\n<p class=\"paragraph_style_3\"><span class=\"style_1\">Pr\u00e9paration de la mousse<\/span>\u00a0:<\/p>\n<p class=\"paragraph_style_3\">dans un mixer, m\u00e9langer 200g de foie gras + 40g de mascarpone + 1 cuill\u00e8re \u00e0 potage de pavot <span class=\"Puce\">+<\/span>1\/2 cuill\u00e8re \u00e0 caf\u00e9 de paprika + sel + poivre moulin + 1 cuill\u00e8re \u00e0 caf\u00e9 de cognac ou d\u2019armagnac.<\/p>\n<p class=\"paragraph_style_3\">Quand le m\u00e9lange est bien homog\u00e8ne, ajouter 20 cl de cr\u00e8me fouett\u00e9e bien ferme.<\/p>\n<p class=\"paragraph_style_3\">R\u00e9server au frigo pendant au minimum 2 heures. Le verser alors dans une poche \u00e0 douille munie<\/p>\n<p class=\"paragraph_style_3\">d\u2019une douille canel\u00e9e.
