{"id":370,"date":"2010-08-10T20:46:45","date_gmt":"2010-08-10T18:46:45","guid":{"rendered":"http:\/\/www.alcollot.fr\/Recettes\/?p=370"},"modified":"2019-10-19T12:48:40","modified_gmt":"2019-10-19T10:48:40","slug":"iles-flottantes-de-saumon-fume","status":"publish","type":"post","link":"https:\/\/www.alcollot.fr\/Recettes\/iles-flottantes-de-saumon-fume\/","title":{"rendered":"Iles flottantes de saumon fum\u00e9"},"content":{"rendered":"<div id=\"id1\" class=\"style_SkipStroke shape-with-text\">\n<div class=\"text-content Normal_External_701_37\">\n<div class=\"Normal\">\n<p class=\"paragraph_style\">Pour 6 personnes en entr\u00e9e ou plus si mise en bouche<\/p>\n<\/div>\n<\/div>\n<\/div>\n<div class=\"style_SkipStroke_1 shape-with-text flowDefining\">\n<div class=\"text-content style_External_899_903\">\n<div class=\"style\">\n<p class=\"paragraph_style_2\">Ingr\u00e9dients :<\/p>\n<ul>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">150g de saumon fum\u00e9<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">3 oeufs<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">25cl de lait + 25cl de lait pour les blancs d\u2019oeufs<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">10cl de cr\u00e8me liquide l\u00e9g\u00e8re<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">1 cuill\u00e8re \u00e0 caf\u00e9 de ma\u00efzena<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">Aneth fraiche ou surgel\u00e9e<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">sel-poivre<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">3 cuill\u00e8res \u00e0 soupe de lentilles cuites (facultatif)<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">1\/2 cube de bouillon de poule<\/p>\n<\/li>\n<\/ul>\n<p class=\"paragraph_style_2\">Pr\u00e9paration\u00a0<span class=\"style_1\">:<br \/>\n<\/span><\/p>\n<p class=\"paragraph_style_6\">Faire cuire les lentilles dans le bouillon: 1\/2 cube de volaille + de l\u2019eau pendant 30mn.<\/p>\n<p class=\"paragraph_style_6\">Egoutter, r\u00e9servez au frais.<\/p>\n<p class=\"paragraph_style_6\"><span class=\"style_2\">Faire une cr\u00e8me anglaise<\/span>: faire bouillir le lait. Battre ensemble 3 jaunes d\u2019oeufs<\/p>\n<p class=\"paragraph_style_6\">+ la ma\u00efzena + le poivre.<\/p>\n<p class=\"paragraph_style_6\">(Le sel ne sera ajout\u00e9 qu\u2019en fin de recette apr\u00e8s avoir incorpor\u00e9 le saumon)<\/p>\n<p class=\"paragraph_style_6\">Verser sur le m\u00e9lange le lait bouillant en fouettant puis mettre sur un feu doux pour faire \u00e9paissir.<\/p>\n<p class=\"paragraph_style_6\">Retirer du feu, ajouter la cr\u00e8me, laisser refroidir.<\/p>\n<p class=\"paragraph_style_6\">Ajouter le saumon fum\u00e9 et mixer pour obtenir une cr\u00e8me homog\u00e8ne.<\/p>\n<p class=\"paragraph_style_6\">Si la cr\u00e8me parait trop \u00e9paisse, ajouter du lait ou de la cr\u00e8me liquide.<\/p>\n<p class=\"paragraph_style_6\">Ajouter le sel si n\u00e9cessaire. R\u00e9server au frais.<\/p>\n<p class=\"paragraph_style_6\">Porter \u00e0 \u00e9bullition 25cl de lait + sel.<\/p>\n<p class=\"paragraph_style_6\">Battre les 3 blancs d\u2019oeufs en neige tr\u00e8s ferme.<\/p>\n<p class=\"paragraph_style_6\">Diminuer le feu sous le lait pour arriver juste \u00e0 un fr\u00e9missement.<\/p>\n<p class=\"paragraph_style_6\">Y d\u00e9poser les blancs d\u2019oeufs par petites cuill\u00e8r\u00e9es.<\/p>\n<p class=\"paragraph_style_6\">Pocher 30 secondes de chaque cot\u00e9.
