{"id":2811,"date":"2025-09-19T09:14:55","date_gmt":"2025-09-19T07:14:55","guid":{"rendered":"https:\/\/www.alcollot.fr\/Recettes\/?p=2811"},"modified":"2025-09-19T09:15:30","modified_gmt":"2025-09-19T07:15:30","slug":"pannacotta-avocat-thon-betterave","status":"publish","type":"post","link":"https:\/\/www.alcollot.fr\/Recettes\/pannacotta-avocat-thon-betterave\/","title":{"rendered":"Pannacotta avocat, thon, betterave"},"content":{"rendered":"\n\n\n<p>Pour 8 personnes et 8 mini verrines<\/p>\n<p>Ingr\u00e9dients\u00a0:<\/p>\n<p>\u00a0avocat bien m\u00fbr (150 g de chair)<\/p>\n<p>10 cl de cr\u00e8me liquide<\/p>\n<p>1 feuille de g\u00e9latine<\/p>\n<p>1 betterave cuite (200 g de chair)<\/p>\n<p>80 gr de fromage frais de ch\u00e8vre ou Saint-Morey<\/p>\n<p>2 cuill\u00e8res \u00e0 potage de mayonnaise +1 petite boite de thon au naturel sel, poivre<\/p>\n<p>3 cuill\u00e8res \u00e0 caf\u00e9 de vinaigre balsamique velours + Le jus d&rsquo;un demi citron<\/p>\n<p><strong>Pr\u00e9paration :<\/strong><\/p>\n<p>Faire tremper la g\u00e9latine dans de l&rsquo;eau bien froide. Pr\u00e9parer la pannacotta. Mixer l&rsquo;avocat avec le citron. Saler et poivrer.<\/p>\n<p>Faire chauffer 10 cl de cr\u00e8me et ajouter la g\u00e9latine essor\u00e9e entre vos doigts. Ajouter \u00a0ette cr\u00e8me \u00e0 l&rsquo;avocat.<\/p>\n<p>R\u00e9partir dans les verrines et mettre au frais environ 2 heures avant de proc\u00e9der au montage.<\/p>\n<p>\u00c9plucher la betterave et la couper en 2. Couper une moiti\u00e9 en morceaux grossiers.<\/p>\n<p>Mixer ces morceaux avec 50 g de fromage frais. Saler et poivrer.<\/p>\n<p>Ajouter 2 cuill\u00e8res \u00e0 caf\u00e9 de vinaigre balsamique. R\u00e9server au frais.Couper le reste de la betterave en tout petits cubes.<\/p>\n<p>Y Ajouter sel poivre et 2 cuill\u00e8res \u00e0 caf\u00e9 de vinaigre balsamique . R\u00e9server au frais.<\/p>\n<p>M\u00e9langer le thon \u00e9goutt\u00e9 \u00e0 2 cuill\u00e8res \u00e0 soupe de mayonnaise.\u00a0 Bien \u00e9mietter et m\u00e9langer intimement. Saler et poivrer mod\u00e9r\u00e9ment. R\u00e9server au frais.<\/p>\n<p><strong><u>Montage de la verrine<\/u><\/strong><strong>.<\/strong><\/p>\n<p>D\u00e9poser la pr\u00e9paration de thon au-dessus de la pannacotta en fine couche. R\u00e9server au frais.<\/p>\n<p>Au moment du repas, ajouter dans la verrine une couche de betterave mix\u00e9e puis terminer avec les cubes de betterave.<\/p>\n<p>Pour le d\u00e9cor, d\u00e9poser au centre une\u00a0touche de fromage frais, \u00e0 la poche \u00e0 douille.
