{"id":280,"date":"2016-08-14T19:25:22","date_gmt":"2016-08-14T17:25:22","guid":{"rendered":"http:\/\/www.alcollot.fr\/Recettes\/?p=280"},"modified":"2019-10-19T18:25:09","modified_gmt":"2019-10-19T16:25:09","slug":"paris-brest","status":"publish","type":"post","link":"https:\/\/www.alcollot.fr\/Recettes\/paris-brest\/","title":{"rendered":"Paris Brest"},"content":{"rendered":"<div id=\"id1\" class=\"style_SkipStroke shape-with-text\">\n<div class=\"text-content Normal_External_697_37\">\n<div class=\"Normal\">\n<p class=\"paragraph_style\"><span style=\"font-size: 1rem;\">Pour 8 personnes<\/span><\/p>\n<\/div>\n<\/div>\n<\/div>\n<div class=\"style_SkipStroke_1 shape-with-text flowDefining\">\n<div class=\"text-content style_External_899_1036\">\n<div class=\"style\">\n<p class=\"paragraph_style_1\"><span class=\"style_1\">Ingr\u00e9dients\u00a0<\/span>:<\/p>\n<p class=\"paragraph_style_3\">P\u00e2te \u00e0 chou :<\/p>\n<ul>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">20 cl d\u2019eau<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">1 cuill\u00e8re \u00e0 potage de sucre<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">60g de beurre<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">1 pinc\u00e9e de sel<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">150g de farine<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">4 oeufs moyens + 1 jaune pour la dorure<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">50g d\u2019amandes effil\u00e9es<\/p>\n<\/li>\n<\/ul>\n<p class=\"paragraph_style_3\">Cr\u00e8me :<\/p>\n<ul>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">12,5 cl de lait<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">12,5 cl de cr\u00e8me liquide<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">80g de pralin (p\u00e2te)<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">15g de ma\u00efzena<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">50g de sucre<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">2 jaunes d\u2019oeuf<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">20 cl de cr\u00e8me fleurette<\/p>\n<\/li>\n<\/ul>\n<p class=\"paragraph_style_5\">Pr\u00e9paration :\u00a0<span class=\"style_2\"><br \/>\n<\/span><\/p>\n<p class=\"paragraph_style_5\"><span class=\"style_3\">P\u00e2te \u00e0 chou<\/span><span class=\"style_2\"> : dans une casserole, porter \u00e0 \u00e9bullition (gros bouillons) l\u2019eau + le sel\u00a0<\/span><span class=\"Puce\">+ <\/span><span class=\"style_2\">le sucre + le beurre. Hors du feu, ajouter la farine en une fois et m\u00e9langer<br \/>\n<\/span><\/p>\n<p class=\"paragraph_style_3\"><span class=\"style_2\">\u00e9nergiquement puis remettre sur le feu (doux) sans cesser de m\u00e9langer<br \/>\n<\/span><\/p>\n<p class=\"paragraph_style_3\"><span class=\"style_2\">jusqu\u2019\u00e0 ce que le p\u00e2te se d\u00e9tache de la casserole.<br \/>\n<\/span><\/p>\n<p class=\"paragraph_style_5\"><span class=\"style_2\">Transvaser la pr\u00e9paration dans le bol d\u2019un batteur puis incorporer les oeufs un \u00e0 un.<br \/>\n<\/span><\/p>\n<p class=\"paragraph_style_5\"><span class=\"style_2\">en m\u00e9langeant bien avec le batteur.<br \/>\n<\/span><\/p>\n<p class=\"paragraph_style_5\"><span class=\"style_2\">Pr\u00e9chauffer le four (180\u00b0).<br \/>\n<\/span><\/p>\n<p class=\"paragraph_style_5\"><span class=\"style_2\">Placer la p\u00e2te dans une poche \u00e0 douille munie d\u2019une douille de 2 cm.<br \/>\n<\/span><\/p>\n<p class=\"paragraph_style_5\"><span class=\"style_2\">Sur une plaque, poser une feuille de papier cuisson et tracer un cercle de 20-22 cm.<br \/>\n<\/span><\/p>\n<p class=\"paragraph_style_5\"><span class=\"style_2\">Sur ce cercle, poser une couronne de p\u00e2te, passer de la dorure avec un pinceau<br \/>\n<\/span><\/p>\n<p class=\"paragraph_style_5\"><span class=\"style_2\">sur toute la surface et parsemer d\u2019amandes effil\u00e9es.<br \/>\n<\/span><\/p>\n<p class=\"paragraph_style_5\"><span class=\"style_2\">Enfourner pour 45 mn sans ouvrir le four puis l\u2019\u00e9teindre.<br \/>\n<\/span><\/p>\n<p class=\"paragraph_style_5\"><span class=\"style_2\">Entr\u2019ouvrir le four et y laisser le Paris-Brest refroidir.<br \/>\n<\/span><\/p>\n<p class=\"paragraph_style_5\"><span class=\"style_2\">Variante : au lieu de faire une couronne, former des choux de 4 cm de diam\u00e8tre<br \/>\n<\/span><\/p>\n<p class=\"paragraph_style_5\"><span class=\"style_2\">tout autour du cercle + dorure + amandes.<br \/>\n<\/span><\/p>\n<p class=\"paragraph_style_5\"><span class=\"style_3\">Cr\u00e8me :<\/span><span class=\"style_2\"><br \/>\n<\/span><\/p>\n<p class=\"paragraph_style_5\"><span class=\"style_2\">battre les oeufs + le sucre + la ma\u00efzena.
