Aux premiers bouillons, retirer du feu<\/p>\n<p class=\"paragraph_style_6\">et y faire fondre le chocolat. Battre les jaunes d\u2019oeufs avec 30g de sucre.Monter les blancs<\/p>\n<p class=\"paragraph_style_6\">en neige tr\u00e8s ferme en ajoutant 20g de sucre d\u00e8s qu\u2019ils commencent \u00e0 monter.<\/p>\n<p class=\"paragraph_style_6\">M\u00e9langer la cr\u00e8me chocolat avec les jaunes d\u2019oeuf, puis ajouter d\u00e9licatement les blancs en neige.<\/p>\n<p class=\"paragraph_style_6\">Verser dans des petits verres ou verrines. R\u00e9server au froid.<\/p>\n<p class=\"paragraph_style_1\">Cr\u00e8me au chocolat :\u00a0<span class=\"style_1\">pour 15 petites cr\u00e8mes:<\/span><\/p>\n<p class=\"paragraph_style_2\">Ingr\u00e9dients :<\/p>\n<ul>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">3cl de cr\u00e8me liquide<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">16cl de lait<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">50cl de chocolat<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">3 jaunes d\u2019oeuf<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">60g de sucre<\/p>\n<\/li>\n<\/ul>\n<p class=\"paragraph_style_5\"><span class=\"style_2\">Pr\u00e9paration :<\/span><\/p>\n<p class=\"paragraph_style_5\">R\u00e2per le chocolat, faire chauffer la cr\u00e8me + le lait jusqu\u2019aux premiers bouillons,<\/p>\n<p class=\"paragraph_style_5\">retirer du feu et verser sur le chocolat. M\u00e9langer les jaunes d\u2019oeuf + le sucre<\/p>\n<p class=\"paragraph_style_5\">et l\u2019incorporer le m\u00e9lange lait &#8211; chocolat.<\/p>\n<p class=\"paragraph_style_6\">Verser dans des petites coupes (mises en bouche). Couvrir d\u2019alu et faire prendre<\/p>\n<p class=\"paragraph_style_6\">au bain-marie dans un four pr\u00e9chauff\u00e9 \u00e0 100\u00b0pendant environ 1h.<\/p>\n<p class=\"paragraph_style_6\">R\u00e9server au froid.<\/p>\n<p class=\"paragraph_style_1\">Glace au chocolat<\/p>\n<p class=\"paragraph_style_6\"><span class=\"style_2\">Ingr\u00e9dients :<br \/>\n<\/span><\/p>\n<ul>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">200g de chocolat \u00e0 60-70%<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">25cl de cr\u00e8me enti\u00e8re liquide<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">25cl de lait entier<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">4 jaunes d\u2019oeuf<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">200g de sucre<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">1 cuill\u00e8re \u00e0 caf\u00e9 de ma\u00efzena<\/p>\n<\/li>\n<\/ul>\n<p class=\"paragraph_style_5\"><span class=\"style_2\">Pr\u00e9paration :<\/span><\/p>\n<p class=\"paragraph_style_5\">La veille: hacher le chocolat<\/p>\n<p class=\"paragraph_style_6\">Faire une cr\u00e8me anglaise en battant les jaunes d\u2019oeuf + le sucre + la ma\u00efzena.<\/p>\n<p class=\"paragraph_style_6\">Verser dessus le lait + la cr\u00e8me port\u00e9s \u00e0 \u00e9bullition, puis continuer la cuisson<\/p>\n<p class=\"paragraph_style_6\">sur feu doux jusqu\u2019\u00e0 ce que la cr\u00e8me \u00e9paississe. Retirer du feu et verser sur le chocolat.<\/p>\n<p class=\"paragraph_style_6\">Continuer \u00e0 remuer pendant 5 minutes.
