{"id":242,"date":"2015-02-20T19:14:00","date_gmt":"2015-02-20T18:14:00","guid":{"rendered":"http:\/\/www.alcollot.fr\/Recettes\/?p=242"},"modified":"2019-10-19T17:46:45","modified_gmt":"2019-10-19T15:46:45","slug":"oeufs-a-la-neige-sur-creme-anglaise-a-la-vanille","status":"publish","type":"post","link":"https:\/\/www.alcollot.fr\/Recettes\/oeufs-a-la-neige-sur-creme-anglaise-a-la-vanille\/","title":{"rendered":"Oeufs \u00e0 la neige sur cr\u00e8me anglaise \u00e0 la vanille"},"content":{"rendered":"<div id=\"id1\" class=\"style_SkipStroke shape-with-text\">\n<div class=\"text-content Normal_External_712_37\">\n<div class=\"Normal\">\n<p class=\"paragraph_style\"><span style=\"font-size: 1rem;\">Pour 4 personnes<\/span><\/p>\n<\/div>\n<\/div>\n<\/div>\n<div class=\"style_SkipStroke_1 shape-with-text flowDefining\">\n<div class=\"text-content style_External_902_784\">\n<div class=\"style\">\n<p class=\"paragraph_style_2\">Ingr\u00e9dients :<\/p>\n<ul>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">4 oeufs<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">sucre : 100g + 50g + 50g<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">lait : 50cl +75cl<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">2 sachets de sucre vanill\u00e9<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">2 gousses de vanille<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">1 cuill\u00e8re \u00e0 caf\u00e9 de ma\u00efzena<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_4\">amandes effil\u00e9es grill\u00e9es<\/p>\n<\/li>\n<\/ul>\n<p class=\"paragraph_style_5\"><span class=\"style_2\">Pr\u00e9paration :<\/span><\/p>\n<p class=\"paragraph_style_6\">Faire une cr\u00e8me anglaise : faire chauffer 50 cl de lait + 2 gousses de vanille ouvertes.<\/p>\n<p class=\"paragraph_style_6\">Lorsque le lait est chaud (pas bouillant), retirer du feu<\/p>\n<p class=\"paragraph_style_6\">et laisser infuser pendant au moins 1 heure.<\/p>\n<p class=\"paragraph_style_6\">Fouetter les 4 jaunes d\u2019oeuf + 100g de sucre + la ma\u00efzena.<\/p>\n<p class=\"paragraph_style_6\">Porter \u00e0 \u00e9bullition le lait et le verser sur les jaunes d\u2019oeuf.<\/p>\n<p class=\"paragraph_style_6\">Faire \u00e9paissir la cr\u00e8me sur feu doux sans cesser de remuer avec une cuill\u00e8re en bois<\/p>\n<p class=\"paragraph_style_6\">jusqu\u2019\u00e0 ce que la cr\u00e8me nappe la cuill\u00e8re<\/p>\n<p class=\"paragraph_style_6\">(si vous utilisez un fouet, la mousse vous emp\u00eache de surveiller la consistance de la cr\u00e8me).<\/p>\n<p class=\"paragraph_style_6\">R\u00e9server la cr\u00e8me au frigo.<\/p>\n<p class=\"paragraph_style_6\">Dans une sauteuse ou un r\u00e9cipient \u00e0 fond large, faire chauffer 75cl de lait<\/p>\n<p class=\"paragraph_style_6\">+ 50g de sucre + le sucre vanill\u00e9.<\/p>\n<p class=\"paragraph_style_6\">Battre les 4 blancs d\u2019oeuf, lorsqu\u2019ils commencent \u00e0 monter, les serrer avec 25g de sucre,<\/p>\n<p class=\"paragraph_style_6\">continuer \u00e0 battre jusqu\u2019\u00e0 ce qu\u2019ils soient tr\u00e8s fermes puis ajouter les 25g de sucre restant.<\/p>\n<p class=\"paragraph_style_6\">Sur le lait fr\u00e9missant, d\u00e9poser des cuiller\u00e9es de blanc d\u2019oeuf et les laisser cuire 1 mn<\/p>\n<p class=\"paragraph_style_6\">avant de les retourner et les laisser cuire \u00e0 nouveau pendant 1mn.<\/p>\n<p class=\"paragraph_style_6\">Les retirer avec une \u00e9cumoire, les d\u00e9poser sur un plateau o\u00f9 ils vont refroidir.<\/p>\n<p class=\"paragraph_style_6\">Au moment de servir, verser la cr\u00e8me anglaise dans une grande coupe<\/p>\n<p class=\"paragraph_style_6\">ou des coupes individuelles, poser sur le dessus les blancs en neige<\/p>\n<p class=\"paragraph_style_6\">et parsemer d\u2019amandes effil\u00e9es grill\u00e9es.<\/p>\n<\/div>\n<\/div>\n<\/div>\n","protected":false},"excerpt":{"rendered":"<p>Pour 4 personnes Ingr\u00e9dients : 4 oeufs sucre : 100g + 50g + 50g lait : 50cl +75cl 2 sachets de sucre vanill\u00e9 2 gousses de vanille 1 cuill\u00e8re \u00e0&#8230;
