Lorsque le lait est chaud (pas bouillant), retirer du feu et laisser infuser pendant au moins 1 heure.<\/p>\n<p class=\"paragraph_style_6\">Fouetter les 4 jaunes d\u2019oeuf + 100g de sucre + la ma\u00efzena. Porter \u00e0 \u00e9bullition le lait et le verser sur les jaunes d\u2019oeuf. Faire \u00e9paissir la cr\u00e8me sur feu doux sans cesser de remuer avec une cuill\u00e8re en bois jusqu\u2019\u00e0 ce que la cr\u00e8me nappe la cuill\u00e8re(si vous utilisez un fouet, la mousse vous emp\u00eache de surveiller la consistance de la cr\u00e8me).<\/p>\n<p class=\"paragraph_style_6\">R\u00e9server la cr\u00e8me au frigo.<\/p>\n<p class=\"paragraph_style_6\">Dans une sauteuse ou un r\u00e9cipient \u00e0 fond large, faire chauffer 75cl de lait + 50g de sucre + le sucre vanill\u00e9. Battre les 4 blancs d\u2019oeuf, lorsqu\u2019ils commencent \u00e0 monter, les serrer avec 25g de sucre, continuer \u00e0 battre jusqu\u2019\u00e0 ce qu\u2019ils soient tr\u00e8s fermes puis ajouter les 25g de sucre restant.<\/p>\n<p class=\"paragraph_style_6\">Sur le lait fr\u00e9missant, d\u00e9poser des cuiller\u00e9es de blanc d\u2019oeuf et les laisser cuire 1 mn avant de les retourner et les laisser cuire \u00e0 nouveau pendant 1mn.<\/p>\n<p class=\"paragraph_style_6\">Les retirer avec une \u00e9cumoire, les d\u00e9poser sur un plateau o\u00f9 ils vont refroidir.
