{"id":1776,"date":"2019-11-06T11:01:10","date_gmt":"2019-11-06T10:01:10","guid":{"rendered":"https:\/\/www.alcollot.fr\/Recettes\/?p=1776"},"modified":"2019-11-30T15:38:41","modified_gmt":"2019-11-30T14:38:41","slug":"delices-de-poires","status":"publish","type":"post","link":"https:\/\/www.alcollot.fr\/Recettes\/delices-de-poires\/","title":{"rendered":"D\u00e9lices de poires"},"content":{"rendered":"\n<p class=\"paragraph_style_1\">pour 6 \u00e0 8 personnes<\/p>\n<p class=\"paragraph_style_2\">Ingr\u00e9dients :<\/p>\n<ul>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">pour les poires caram\u00e9lis\u00e9es :<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">\u00a0 \u00a03 poires William (fermes)<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">\u00a0 \u00a020 g de beurre<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">\u00a0 \u00a030 g de sucre en poudre<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">pour la cr\u00e8me :<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">\u00a0 \u00a0250 g de mascarpone<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">\u00a0 \u00a03 oeufs<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">\u00a0 \u00a050 g de sucre<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">\u00a0 \u00a02 sachets de sucre vanill\u00e9<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">\u00a0 \u00a02 feuilles de g\u00e9latine + 5 cl de cr\u00e8me liquide<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">pour le coulis<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">\u00a0 \u00a01\/2 boite de poires au sirop<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">\u00a0 \u00a02 sachets de sucre vanill\u00e9<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">\u00a0 \u00a03 cuill\u00e8res \u00e0 potage d&rsquo;Amaretto<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">50g d&rsquo;amandes effil\u00e9es<\/p>\n<\/li>\n<\/ul>\n<p class=\"paragraph_style_1\"><span class=\"style_1\">Pr\u00e9paration :<\/span><\/p>\n<p class=\"paragraph_style_4\">Faire tremper les feuilles de g\u00e9latine dans de l\u2019eau froide pendant 15 mn.<\/p>\n<p class=\"paragraph_style_4\">Eplucher et couper les poires en petits d\u00e9s, les faire revenir dans une po\u00eale avec le beurre et le sucre jusqu&rsquo;\u00e0 caram\u00e9lisation. Les r\u00e9partir dans des coupes.<\/p>\n<p class=\"paragraph_style_4\">Cr\u00e8me : battre ensemble 2 jaunes d&rsquo;oeuf + 1 oeuf entier + 50 g de sucre + le sucre vanill\u00e9 pour obtenir un m\u00e9lange tr\u00e8s mousseux. Y ajouter le mascarpone.<\/p>\n<p class=\"paragraph_style_4\">Faire chauffer 5 cl de cr\u00e8me liquide, retirer du feu et y ajouter la g\u00e9latine \u00e9goutt\u00e9e. Bien d\u00e9layer au fouet et ajouter \u00e0 la pr\u00e9paration ci dessus sans cesser de battre.<\/p>\n<p class=\"paragraph_style_4\">Monter les blancs d&rsquo;oeufs en neige tr\u00e8s ferme et les ajouter \u00e0 la cr\u00e8me. Verser la cr\u00e8me dans les coupes sur les poires et couvrir d&rsquo;un film alimentaire. R\u00e9server au frigo jusqu&rsquo;au moment de servir.<\/p>\n<p class=\"paragraph_style_4\">Faire le coulis en mixant les poires au sirop + 3 cuill\u00e8res de sirop (de la boite) + 3 cuill\u00e8res d&rsquo;Amaretto.
