{"id":172,"date":"2013-01-27T18:48:40","date_gmt":"2013-01-27T17:48:40","guid":{"rendered":"http:\/\/www.alcollot.fr\/Recettes\/?p=172"},"modified":"2019-10-19T16:11:07","modified_gmt":"2019-10-19T14:11:07","slug":"tete-de-veau-sauce-ravigote","status":"publish","type":"post","link":"https:\/\/www.alcollot.fr\/Recettes\/tete-de-veau-sauce-ravigote\/","title":{"rendered":"T\u00eate de veau sauce ravigote"},"content":{"rendered":"<div id=\"id1\" class=\"style_SkipStroke shape-with-text\">\n<div class=\"text-content Normal_External_706_37\">\n<div class=\"Normal\">\n<p class=\"paragraph_style\"><span style=\"font-size: 1rem;\">Pour 6 personnes<\/span><\/p>\n<\/div>\n<\/div>\n<\/div>\n<div class=\"style_SkipStroke_1 shape-with-text flowDefining\">\n<div class=\"text-content style_External_897_1309\">\n<div class=\"style\">\n<p class=\"paragraph_style_2\">Ingr\u00e9dients :<\/p>\n<ul>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">1\/2 t\u00eate de veau roul\u00e9e<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">1 langue de veau<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">12 grandes carottes de formes bien r\u00e9guli\u00e8res<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">1\/2 c\u00e9leri (rave, branche)<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">2 oignons piqu\u00e9s de 2 clous de girofle<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">2 feuilles de laurier<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">1 poireau<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">sel-poivre<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">1 kg de pommes de terre moyennes \u00e0 chair fermes (charlottes)<\/p>\n<\/li>\n<\/ul>\n<p class=\"paragraph_style_1\"><span class=\"style_1\">Pr\u00e9paration :<\/span><\/p>\n<p class=\"paragraph_style_4\">La veille:<\/p>\n<p class=\"paragraph_style_4\">passer la t\u00eate de veau et la langue sous le robinet d\u2019eau froide puis les d\u00e9poser dans un faitout<\/p>\n<p class=\"paragraph_style_4\">ou dans un auto cuiseur, ajouter de l\u2019eau \u00e0 hauteur + les oignons\u00a0 +le sel + le poivre.<\/p>\n<p class=\"paragraph_style_4\">Porter \u00e0 \u00e9bullition puis \u00e9cumer (enlever l\u2019\u00e9cume qui s\u2019est form\u00e9e sur le dessus avec une \u00e9cumoire).<\/p>\n<p class=\"paragraph_style_5\">Ajouter le laurier, le poireau, fermer le faitout et laisser cuire pendant 90mn<\/p>\n<p class=\"paragraph_style_5\">(ou 45mn en autocuiseur). Ajouter les carottes coup\u00e9es en 2, le c\u00e9leri et laisser cuire<\/p>\n<p class=\"paragraph_style_5\">encore pendant 45mn (autocuiseur : 20mn) R\u00e9server au froid dans le faitout.<\/p>\n<p class=\"paragraph_style_4\">En pr\u00e9parant le t\u00eate de\u00a0 veau la veille, il sera plus facile de la d\u00e9couper en belles tranches le lendemain.<\/p>\n<p class=\"paragraph_style_4\">Le lendemain :<\/p>\n<p class=\"paragraph_style_4\">d\u00e9couper la t\u00eate de veau et la langue en tranches de 1cm d\u2019\u00e9paisseur.<br \/>\nLes disposer harmonieusement sur un plat allant au four avec les carottes et le c\u00e9leri coup\u00e9 en tranches.<\/p>\n<p class=\"paragraph_style_4\">Porter le faitout sur le feu contenant le jus transform\u00e9 en gel\u00e9e lorsqu\u2019il est liqu\u00e9fi\u00e9.<\/p>\n<p class=\"paragraph_style_4\">Passer le jus et en verser un peu dans le plat, couvrir d\u2019alu et r\u00e9chauffer \u00e0 120\u00b0 (th.4) pendant 1 heure.<\/p>\n<p class=\"paragraph_style_4\">Eplucher les pommes de terre, les cuire dans le jus de la t\u00eate de veau pendant 20 mn<\/p>\n<p class=\"paragraph_style_4\">\u00e0 partir de l\u2019\u00e9bullition. Egoutter au moment du service.<\/p>\n<p class=\"paragraph_style_4\">Servir les pommes de terre dans un l\u00e9gumier et les sauces en sauci\u00e8res.<\/p>\n<p class=\"paragraph_style_6\">Sauce ravigote :<\/p>\n<ul>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">2 oeufs durs \u00e9cras\u00e9s \u00e0 la fourchette<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">1 cuill\u00e8re \u00e0 potage de moutarde<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">1 cuill\u00e8re \u00e0 potage de mayonnaise<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">2 cuill\u00e8res \u00e0 potage de vinaigre<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">2 cuill\u00e8res \u00e0 potage d\u2019huile d\u2019arachide ou tournesol<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">4 cornichons coup\u00e9s en tr\u00e8s petits morceaux<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">2 cuill\u00e8res \u00e0 potage de c\u00e2pres<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">sel-poivre<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_3\">1 cuill\u00e8re \u00e0 potage de ciboulette<\/p>\n<\/li>\n<\/ul>\n<p class=\"paragraph_style_5\">M\u00e9langer tous les \u00e9l\u00e9ments.
