Ajouter le lait chaud + l&rsquo;essence d&rsquo;amande. Verser dans des r\u00e9cipients \u00e0 votre choix : plat \u00e0 cr\u00e8me brul\u00e9e ou tasses etc.Les recouvrir de film alimentaire, les poser sur une plaque ou un plat et les glisser soit dans un four vapeur \u00e0 90\u00b0 pendant 30 mn\u00a0ou plus suivant la hauteur du r\u00e9cipient ou au bain marie dans un four normal pendant environ 30-40 mn. Chaleur 100\u00b0.<\/p>\n<p>V\u00e9rifier la cuisson avec la pointe d&rsquo;un couteau. La cr\u00e8me doit \u00eatre prise, un peu tremblotante. R\u00e9server au frigo.<\/p>\n<p><strong><em>Cr\u00e8me au chocolat<\/em><\/strong> : faire une cr\u00e8me anglaise : chauffer le lait + la cr\u00e8me. Battre les jaunes d&rsquo;oeuf + le sucre + la ma\u00efzena. Ajouter le lait chaud. Remettre sur feu doux sans cesser de remuer jusqu&rsquo;\u00e0 \u00e9paississement puis ajouter les 2 chocolats et bien m\u00e9langer pour obtenir un m\u00e9lange bien lisse.<\/p>\n<p>Laisser juste refroidir (encore un peu ti\u00e8de). Verser une fine couche sur la cr\u00e8me\u00a0 bien froide.\u00a0Au moment de servir, d\u00e9corer le centre de chaque cr\u00e8me avec quelques pistaches hach\u00e9es. Tout peut se faire la veille.
