{"id":1039,"date":"2017-11-18T17:56:22","date_gmt":"2017-11-18T16:56:22","guid":{"rendered":"http:\/\/www.alcollot.fr\/Recettes\/?p=1039"},"modified":"2020-02-01T11:04:51","modified_gmt":"2020-02-01T10:04:51","slug":"creme-de-haddock-en-gelee","status":"publish","type":"post","link":"https:\/\/www.alcollot.fr\/Recettes\/creme-de-haddock-en-gelee\/","title":{"rendered":"Cr\u00e8me de haddock en gel\u00e9e"},"content":{"rendered":"<p class=\"paragraph_style_1\">pour 6 personnes<\/p>\n<p class=\"paragraph_style_3\">Ingr\u00e9dients :<\/p>\n<ul>\n<li class=\"full-width\">\n<p class=\"paragraph_style_5\">12,5cl de cr\u00e8me liquide enti\u00e8re<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_5\">12,5 cl de lait entier<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_5\">100g de haddock<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_5\">1 oeuf entier + 2 jaunes<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_5\">1 sachet de gel\u00e9e + 40 cl d\u2019eau<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_5\">1\/2 cuill\u00e8re \u00e0 caf\u00e9 de curry<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_5\">Oeufs de lump ou caviar<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_5\">Brins d\u2019aneth<\/p>\n<\/li>\n<li class=\"full-width\">\n<p class=\"paragraph_style_5\">Thym, laurier, poivre,sel<\/p>\n<\/li>\n<\/ul>\n<p class=\"paragraph_style_7\">Pr\u00e9paration<\/p>\n<p class=\"paragraph_style_6\">2 jours avant le repas :<\/p>\n<p class=\"paragraph_style_4\">dans une casserole, plonger le haddock dans le lait + la cr\u00e8me +1 branche de thym<\/p>\n<p class=\"paragraph_style_8\"><span class=\"Puce\">+<\/span>1 feuille de laurier + le poivre. Ajouter tr\u00e8s peu de sel, le haddock \u00e9tant sal\u00e9.<\/p>\n<p class=\"paragraph_style_4\">Porter sur feu doux. A la premi\u00e8re \u00e9bullition, retirer du feu et laisser infuser au froid<\/p>\n<p class=\"paragraph_style_4\">jusqu\u2019au lendemain.<\/p>\n<p class=\"paragraph_style_6\">La veille du repas :<\/p>\n<p class=\"paragraph_style_4\">Filtrer le lait de haddock.<br \/>\nBattre les jaunes d\u2019oeufs + 1 oeuf entier et ajouter le m\u00e9lange lait-cr\u00e8me ti\u00e8de.<br \/>\nVerser dans des verres ou des tasses supportant la chaleur.<\/p>\n<p class=\"paragraph_style_4\">D\u00e9poser dans un plat, couvrir d\u2019alu, faire cuire au bain marie (chaud) \u00e0 120\u00b0 pendant 40 mn.<\/p>\n<p class=\"paragraph_style_4\">Surveiller la cuisson, \u00e0 la fin les cr\u00e8mes doivent \u00eatre prises et encore un peu tremblotantes.<\/p>\n<p class=\"paragraph_style_4\">Eteindre le four et laisser les cr\u00e8mes ti\u00e9dir puis les r\u00e9server au frigo.<\/p>\n<p class=\"paragraph_style_4\">Faire la gel\u00e9e.<br \/>\nPorter \u00e0 \u00e9bullition la gel\u00e9e + 40 cl d\u2019eau + le curry.<\/p>\n<p class=\"paragraph_style_4\">Laisser refroidir mais pas prendre.
