Laisser monter au chaud. Ajouter ce levain \u00e0 1 kg de farine + 200g de sucre + 450g de beurre ramolli + 3 \u0153ufs + 1\u20444 de lait ti\u00e8de + sel. Battre cette p\u00e2te pendant 1\u20444 d\u2019heure. Laisser monter \u00e0 temp\u00e9rature ambiante. Rabattre la p\u00e2te. Couvrir. Mettre au froid jusqu\u2019au lendemain.<\/p>\n<p class=\"paragraph_style_4\">Le lendemain, partager la p\u00e2te en deux ou trois parts.<\/p>\n<p class=\"paragraph_style_4\">Aplatir au rouleau chaque part en ovale sur 1 cm de hauteur. Garnir avec des raisins secs, des fruits confits, des dattes en petits morceaux, des amandes et des noisettes grill\u00e9es coup\u00e9es en morceaux, des noix &#8230;.et un morceau de p\u00e2te d\u2019amande en boudin que l\u2019on posera au milieu de la p\u00e2te. Donner un tour de rouleau sur tous ces fruits pour qu\u2019ils p\u00e9n\u00e8trent dans la p\u00e2te, puis replier la p\u00e2te en portefeuille (en 3).<\/p>\n<p class=\"paragraph_style_4\">Laisser monter sur le plateau de cuisson,jusqu\u2019\u00e0 ce qu\u2019il double de volume. Pr\u00e9chauffer le four \u00e0 180\u00b0. Enfourner le stollen. Apr\u00e8s 1\u20444 d\u2019heure, diminuer le four \u00e0 150\u00b0 et laisser cuire encore pendant 1\u20442 heure.<\/p>\n<p class=\"paragraph_style_2\">Faire fondre 50g de beurre \u00e0 la sortie du four, en badigeonner tout le stollen puis saupoudrer de sucre glace.
